Buckwheat noodle is good diet product. They are characterized with a lot of digestible protein, amino acids and fiber. Most of the protein consists of albumin and globulins, which the human body absorb very well. Buckwheat protein‘s nutrition and digestibility is equivalent to legume proteins, biologicaly buckwheat protein is equivalent to dry milk and chicken egg proteins. Buckwheat is relatively rich in iron, phosphorus, calcium, copper, organic acids. Buckwheat more than any other plant grains has vitamins such as B1, B2, B6, B9, PP, E5. Buckwheat has magnesium, cobalt (vitamin B12), fluorine (required for tooth enamel, it is very important when the teeth are still developing), iron, molybdenum (required for enzyme activity, which neutralize the toxins involved in the production of hemoglobin, prevents tooth caries). Buckwheat noodles are rich in carbohydrates –which is necessary for physical activity.
